The building that houses this iconic restaurant has a very interesting past. For me, the ambiance of a place has as much to do with my decision to return as the food, the wait staff, or the beer. Edelweiss has it in liters! It was first erected in 1901 as a schoolhouse in what was then known as the suburb of Ivywild (originally located at 1604 South Cascade). By 1915 it had become too small and was moved so a bigger school could be built. The little schoolhouse was relocated to an area known as “Jenkins Pond.” The pond was filled in with ash from the downtown power plant. Prior to the structure being dropped a new foundation of one meter thick walls was built with rocks hauled in from Cheyenne Canyon. After the move it became a residence, and in 1967 became the home for Edelweiss.
